Chocolate Chip Peanut Butter Balls

It’s Wednesday, hump day, what better way to get through the week than by snacking on something quick and tasty? I’ve made these protein balls and shared the recipe with several members of our gym and haven’t heard a complaint yet. 🙂

Ingredients

1 1/2 cup rolled oats

1/2 cup peanut butter

1/2 cup vanilla protein powder   

3 Tbl raw honey

1/2 tsp cinnamon    

1 tsp vanilla extract

1 Tbl chia seeds

2-4 Tbl water

1 cup chocolate chips or 1/2 cup mini chocolate chips

Step 1

Take all the ingredients, except the water and chocolate chips and for simplicity, throw it in a food processor. You can stir up all the ingredients in a bowl if you’d like, completely up to you. To save time, I prefer to use the food processor. You are gonna add water to the mix a tablespoon at time till the mixture is more manageable to form. The softer it is, the easier to shape the balls BUT you don’t want it to be sticky.

Step 2

Once it’s reached the desired consistency, stir in the chocolate chips. Then you can either scoop out the dough a spoonful at time and roll into balls OR you can use a mini ice scream scooper, again, it’s quick and easy. Also, the size is a bit smaller so you don’t feel as bad eating, you know, 3 or 4 of them. 😀

Store these yummy snacks in an air tight container in the fridge. Supposedly, these will hold for a little over a week, I haven’t had the pleasure of testing this theory. With my family around, I’m lucky if they last 2 days. They really are that yummy.

Substitutions

I have substituted almond butter for the peanut butter and white chocoloate chips instead of the dark chocolate chips, and they’re still yummy. I’ve linked the protein powder I use and purchase from Absolute Nutrition. I have used other protein powders, and they will taste fine, the major difference, will be the amount of water you may/may not have to add. I just prefer this brand, this flavor.
